Abstract

Indonesia is a country rich in tropical fruit which has great potential to be developed into various products. One of them is jackfruit (Arthocarpus heterophyllus) which has many benefits. Jackfruit consumption in South Sulawesi is quite high, the selling price tends to be stable so it is easy to find from traditional markets to supermarkets. However, further utilization is still lacking, so this research needs to be carried out. This research aims to determine the diversity of uses of jackfruit as a potential fruit descriptively. The results obtained are that jackfruit can be used as a basic ingredient for Nata de Jackfruit, compost fertilizer, liquid organic fertilizer, premium bioethanol mixture and jackfruit chips. This shows that jackfruit is a potential fruit that needs to be developed.
